CxRA Truffle Mac & Cheese Bites
Prep Time: 1 hour 30 minutes
Yields 1 baking sheet – 13”x18”
Ingredients:
- 1 lb. Elbow Macaroni
- 1 qt. Heavy Cream
- 2.5 lbs. Yellow American Cheese
- 6 oz. Finely Grated Parmesan Cheese
- 2 oz. Summer Truffles Chopped
- 6 oz. White Truffle Oil
- 1 teaspoon Black Pepper
- 1 cup Flour
- 4 Eggs
- 2 cups Italian Breadcrumbs with Grated Parmesan Cheese
Method:
Cook elbow macaroni in salted water. Drain and reserve. Do not rinse.
Place heavy cream in heavy gauge pot. Slowly warm cream. Add American cheese in small amounts at a time until melted. When American cheese is melted, stir in parmesan cheese, truffles, truffle oil, and black pepper.
Add cooked macaroni to cheese sauce and stir until blended.
Spray baking sheet with non-stick spray and line with parchment paper. Spray parchment paper as well.
Pour macaroni and cheese mixture on to baking sheet. Spread till even with rubber spatula. Set in refrigerator to cool for at least 4 hours.
Remove from fridge and run knife along edge. Turn pan over onto a cutting board. Remove parchment paper. Cut 1”x1” cubes. Return to refrigerator again while preparing breading mixture.
Coat chilled cubes in with flour, then whipped eggs and then Italian breadcrumbs with parmesan cheese. Freeze breaded cubes until ready to fry.
Fry cubes in small batches in 350 degree vegetable oil. Serve immediately and enjoy!
